Cellulose: A major component of plant cell walls. It is the most abundant organic compound on Earth. Humans lack the enzyme (cellulase) required to break the beta-linkages, so it passes through as insoluble fiber.
Chitin: Found in the exoskeletons of arthropods (insects, crustaceans) and the cell walls of fungi. It is unique because it contains nitrogen (modified glucose polymer).
Peptidoglycan: Found in bacterial cell walls.
